Lori Valenti has almost tripled the size of her business, Perfect Catering, with the construction of a new building at 2028 Alpine Road in Longview

Perfect Catering's new home is almost 5,000 square feet. That compares to the 1,500-square-foot building it was previously in on Teague Street.

"We were turning away too much business," Valenti said of her reason for expansion. "It was not functional for everything we did."

Her former kitchen had space for three people, she said. The new kitchen can accommodate six to eight people.

The new kitchen also will soon function electronically, with recipes and the days or week's orders accessed through iPads versus the large notebooks of recipes the business has been using.聽

Valenti began working at Perfect Catering in 2011 and then purchased the business in 2016.

Her new location has more and larger refrigerators and freezers as well as more cooking and storage space.聽 She also has a new loading and unloading area that allows Perfect Catering to bring four of its six catering vans out of the weather to load food.

One of those vans is equipped with electricity and refrigeration. That means food can be kept cold, and hot boxes can be plugged in and food can cook on the way to a job.

"You've got to make it happen," she said of the upgrades.

Valenti will host an open house at the new location 4:30-6:30 p.m. June 17.聽

Dunkin' update

Dunkin' donuts are on the way to Longview.

Dunkin' filed information with the state showing it expects to start construction of its Longview store at the end of July at 2305 Judson Road.

The company estimated the $1.3-million project would be complete by the end of the year. Dunkin' will be 2,009 square feet and located near Frankie's Filling Station.

Sparklight expands to White Oak

Ultimately, more than 2,500 homes and businesses will be connected. With service now officially launched in several neighborhoods, residents and businesses can start signing up for Multi-Gig internet speeds.
